Cheese Fondue
Melted Swiss cheese in white wine, served with bread cubes and vegetables for dipping. A classic communal Swiss dining experience.
Ingredients
- 12 oz Gruyere cheese, shredded
- 6 oz Emmental cheese, shredded
- 1/2 cup Dry white wine
- 1 tbsp Cornstarch
- 2 cloves Garlic, minced
- 1/4 tsp Nutmeg
- 1/4 tsp Black pepper
- 1 lb Crusty bread, cut into cubes
- 12 oz Waxy potatoes, cooked and halved
- 4 cups Broccoli florets

Toss 12 oz Gruyere cheese and 6 oz Emmental cheese with 1 tbsp Cornstarch to coat.

Pour 1/2 cup Dry white wine into a heavy pot and heat over medium. Add 2 cloves minced Garlic and bring to a gentle simmer.

Gradually add the cheese mixture, stirring constantly until fully melted and smooth, about 5-7 minutes.

Season with 1/4 tsp Nutmeg and 1/4 tsp Black pepper to taste.

Transfer to a fondue pot and keep warm over a low flame.

Arrange 1 lb cut into cubes Crusty bread, 12 oz cooked and halved Waxy potatoes, and 4 cups Broccoli florets on a platter for dipping.

Guests spear pieces with fondue forks, swirl in the cheese, and eat while warm.
