Torrijas
Spanish French toast made with thick-cut bread dipped in sweet cinnamon-infused milk, fried until golden, and drizzled with honey. A beloved Easter tradition.
Ingredients
- 8 slices brioche or thick-cut bread, sliced 1-inch thick
- 2 large eggs
- 1.5 cups whole milk
- 1/2 tsp ground cinnamon
- 2 tbsp granulated sugar
- 1/4 tsp vanilla extract
- 1/4 tsp lemon zest
- 4 tbsp olive oil (for frying)
- 4 tbsp honey
- 1/4 tsp ground cinnamon (for topping)

Whisk 2 large eggs in a shallow bowl. Pour in 1.5 cups whole milk and add 1/2 tsp ground cinnamon, 2 tbsp granulated sugar, 1/4 tsp vanilla extract, and 1/4 tsp lemon zest. Stir until sugar dissolves and mixture is smooth.

Heat 4 tbsp olive oil (for frying) in a large skillet over medium-high heat until shimmering.

Working with one slice at a time, dip 8 slices sliced 1-inch thick brioche or thick-cut bread into milk mixture (1-2 seconds per side).

Place dipped bread in hot oil and fry 2-3 minutes on first side until golden. Flip and fry 1-2 minutes on other side until golden brown.

Transfer to a paper towel-lined plate to drain excess oil. Keep warm on serving platter.

Drizzle generously with 4 tbsp honey and sprinkle lightly with 1/4 tsp ground cinnamon (for topping). Serve warm.
