Kisir
A Turkish herb and bulgur salad infused with tangy pomegranate molasses and savory pepper paste. Refreshing and deeply aromatic, it is traditionally served wrapped in fresh lettuce leaves.
Ingredients
- 2 cups fine bulgur
- 1.5 cups boiling water
- 2 tbsp tomato paste
- 2 tbsp Turkish pepper paste
- 1/4 cup extra-virgin olive oil
- 2 tbsp pomegranate molasses
- 2 tbsp fresh lemon juice
- 6 scallions, thinly sliced
- 1 cup flat-leaf parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 1 tsp fine sea salt
- 1 tsp ground cumin

Place 2 cups fine bulgur in a large heatproof bowl and pour 1.5 cups boiling water over it.

Cover bowl tightly with a lid or plate and rest for 15 minutes until softened.

Fluff bulgur with a fork, then thoroughly work in 2 tbsp tomato paste, 2 tbsp Turkish pepper paste, 1/4 cup extra-virgin olive oil, 2 tbsp pomegranate molasses, 2 tbsp fresh lemon juice, 1 tsp fine sea salt, and 1 tsp ground cumin.

Fold in 6 thinly sliced scallions, 1 cup finely chopped flat-leaf parsley, and 1/2 cup finely chopped fresh mint until uniformly combined.

Serve chilled or at room temperature with tender lettuce leaves.
