Ayva Tatlisi
A classic Turkish dessert of poached quinces slow-cooked in sugar syrup until tender and rich ruby red. Served chilled with thick clotted cream and crushed pistachios.
Ingredients
- 2 quinces, halved
- 2 tbsp lemon juice
- 1 cup granulated sugar
- 2 cups water
- 6 whole cloves
- 1 cinnamon stick
- 1/2 cup clotted cream
- 2 tbsp pistachios, crushed

Rub 2 halved quinces halves with 2 tbsp lemon juice to prevent browning during preparation.

Arrange 2 halved quinces hollow side up in a wide pot along with 6 whole cloves and 1 cinnamon stick.

Spoon 1 cup granulated sugar into each quince hollow and pour 2 cups water around the base.

Cover pot and simmer over low heat for 60 minutes until quinces turn deep red and tender.

Cool completely, then top each half with 1/2 cup clotted cream and 2 tbsp crushed pistachios.
