Air Fryer Garlic Parmesan Zucchini Chips
Thin zucchini rounds coated in seasoned breadcrumbs and Parmesan, air-fried until crispy — a light vegetarian snack or side that eats like a chip.
Ingredients
- 2 medium zucchini, 1/4-inch rounds
- 1/2 cup panko breadcrumbs
- 1/4 cup finely grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 large egg, beaten

Place 2 medium 1/4-inch rounds zucchini on paper towels, sprinkle lightly with 1/2 tsp kosher salt, and let sit 5 minutes. Pat dry to remove excess moisture.

In a shallow bowl, combine 1/2 cup panko breadcrumbs, 1/4 cup finely grated Parmesan cheese, 1/2 tsp garlic powder, 1/2 tsp Italian seasoning, and 1/4 tsp black pepper.

Dip each zucchini round in beaten large egg, letting the excess drip off, then press into the breadcrumb mixture to coat both sides.

Preheat the air fryer to 400°F for 3 minutes. Spray the basket with cooking spray. Arrange the zucchini rounds in a single layer without overlapping.
