Antipasto Skewers
Colorful no-cook party skewers loaded with salami, fresh mozzarella, olives, marinated artichoke hearts, and roasted peppers, drizzled with a herby Italian dressing.
Ingredients
- 6 oz sliced Italian salami or pepperoni, folded in half
- 8 oz fresh mozzarella balls (ciliegine)
- 1/2 cup kalamata olives (pitted)
- 8 oz marinated artichoke hearts, drained, halved
- 8 oz jarred roasted red peppers, cut into 1-in pieces
- 24 leaves fresh basil leaves
- 1/4 cup Italian vinaigrette dressing
- 1/2 tsp dried oregano
- 1/4 tsp black pepper, freshly ground

Set out 12 (6-inch) skewers. Thread onto each skewer: 6 oz folded in half sliced Italian salami or pepperoni, 8 oz fresh mozzarella balls (ciliegine), 1/2 cup kalamata olives (pitted), 8 oz drained, halved marinated artichoke hearts, 8 oz cut into 1-in pieces jarred roasted red peppers, and 24 leaves fresh basil leaves, repeating to fill.

Arrange the finished skewers on a serving platter.

Drizzle 1/4 cup Italian vinaigrette dressing evenly over all the skewers, then sprinkle with 1/2 tsp dried oregano and 1/4 tsp freshly ground black pepper.

Serve immediately or refrigerate for up to 4 hours before serving.
