Baked Cheese Manicotti
Tender pasta tubes stuffed with a creamy three-cheese filling and baked in marinara sauce until bubbly.
Ingredients
- 8 oz manicotti pasta shells
- 2 cups whole milk ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- 2 tbsp fresh parsley, chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 cups marinara sauce

Preheat oven to 375 degrees F.

Boil 8 oz manicotti pasta shells in salted water until slightly undercooked, about 7 minutes, then drain.

In a bowl, combine 2 cups whole milk ricotta cheese, half of the 2 cups shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, 1 beaten egg, 2 tbsp chopped fresh parsley, 1/2 tsp kosher salt, and 1/4 tsp black pepper.

Spread one third of the 3 cups marinara sauce across the bottom of a baking dish.

Pipe or spoon the cheese mixture into each cooked manicotti pasta shells and lay them in the baking dish.

Top with remaining marinara sauce and remaining shredded mozzarella cheese.

Cover with foil and bake for 25 minutes, then uncover and bake 10 minutes more until bubbly.
