Swiss Chocolate Mousse
Silky smooth Swiss chocolate mousse made with dark chocolate and whipped cream. An elegant, light dessert that melts on the tongue.
Ingredients
- 6 oz Dark chocolate (70% cocoa), chopped
- 1 tbsp Butter
- 2 Egg yolks
- 4 tbsp Granulated sugar
- 1 cup Heavy cream, cold
- 1/4 tsp Vanilla extract
- 1/8 tsp Salt

Place 6 oz chopped Dark chocolate (70% cocoa) and 1 tbsp Butter in a heatproof bowl. Melt over a pot of simmering water (double boiler method), stirring until smooth. Remove from heat and let cool slightly.

In another bowl, whisk 2 Egg yolks with 4 tbsp Granulated sugar until pale and thick, about 2 minutes.

Fold the yolk mixture into the melted chocolate, stirring gently until combined. Stir in 1/4 tsp Vanilla extract.

In a separate bowl, whip the 1 cup cold Heavy cream to stiff peaks.

Gently fold the whipped cream into the chocolate mixture in two additions, folding carefully to preserve air.

Season with 1/8 tsp Salt.

Divide into serving glasses or bowls. Chill for at least 30 minutes before serving.
