Potato Vareniki
Classic dumplings stuffed with creamy mashed potatoes and sweet caramelized onions, served with sour cream.
Ingredients
- 3 cups all-purpose flour
- 1 large egg, beaten
- 2/3 cup warm water
- 1 tsp salt
- 2 lbs russet potatoes, peeled, diced
- 4 tbsp unsalted butter
- 2 medium yellow onion, finely diced
- 1/2 cup sour cream

Boil 2 lbs peeled, diced russet potatoes in salted water for 15 minutes until tender, then drain and mash with half of the 4 tbsp unsalted butter.

Melt remaining 4 tbsp unsalted butter in a skillet over medium heat, add 2 medium finely diced yellow onion, and cook until caramelized, then mix half into the mashed russet potatoes along with 1 tsp salt.

In a large bowl, combine 3 cups all-purpose flour, 1 beaten large egg, and 2/3 cup warm water to form a soft dough, then knead for 5 minutes and rest for 20 minutes.

Roll dough thin on a floured surface, cut out rounds, place a spoonful of potato filling in each, and pinch edges tightly to seal.

Boil vareniki in a large pot of salted water for 3 to 5 minutes after they float to the top.

Drain and serve hot topped with reserved caramelized yellow onion and a side of 1/2 cup sour cream.
