Brown Butter Sticky Toffee Pudding

- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1/2 tsp baking soda
- 6 tbsp butter, softened
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 4 tbsp butter
- 4 tbsp demerara sugar
- 1/2 cup heavy cream

Preheat oven to 350°F. Grease a baking dish.

Pour 1 cup boiling water over 1 cup chopped pitted dates, add 1/2 tsp baking soda, and let sit for 10 minutes.

Cream 6 tbsp softened butter and 1/2 cup packed brown sugar together until light and fluffy.

Beat in 2 large eggs one at a time, then 1/2 tsp vanilla extract.

Combine 1 cup all-purpose flour, 1/4 tsp baking powder, and 1/4 tsp salt.
