Carrot and Coriander Soup
A classic British soup featuring sweet carrots simmered with warm ground coriander and fresh cilantro, then blended until silky smooth.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground coriander
- 1.5 lbs carrots, chopped
- 4 cups vegetable broth
- 1/4 cup fresh coriander, chopped
- 1/2 tsp salt

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 chopped yellow onion and 2 minced garlic cloves, cooking for 5 minutes until softened.

Stir in 1 tsp ground coriander and cook for 1 minute until fragrant.

Add 1.5 lbs chopped carrots, 4 cups vegetable broth, and 1/2 tsp salt, then bring to a boil.

Reduce heat, cover, and simmer for 20 minutes until carrots are tender.

Remove from heat, stir in 1/4 cup chopped fresh coriander, and purée in a blender until smooth.
