Cajun Seafood Stuffed Mushrooms
Plump mushroom caps filled with Cajun-seasoned shrimp, crabmeat, and cream cheese baked until golden and bubbling.
Ingredients
- 24 oz cremini mushrooms, stems removed
- 2 tbsp unsalted butter
- 1/4 cup green bell pepper, finely diced
- 1/4 cup celery, finely diced
- 2 garlic cloves, minced
- 1/2 lb peeled raw shrimp, chopped
- 1 tsp Cajun seasoning
- 4 oz lump crabmeat, drained
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tbsp green onion, sliced

Preheat oven to 375 degrees F and grease a baking sheet.

Arrange 24 oz stems removed cremini mushrooms hollow-side up on the baking sheet.

Melt 2 tbsp unsalted butter in a skillet over medium heat, then add 1/4 cup finely diced green bell pepper, 1/4 cup finely diced celery, and 2 minced garlic cloves and sauté for 3 minutes.

Add 1/2 lb chopped peeled raw shrimp and 1 tsp Cajun seasoning to the skillet and cook for 2 minutes until pink and internal temperature reaches 145 degrees F.

Remove skillet from heat and mix in 4 oz drained lump crabmeat, 4 oz softened cream cheese, 1/4 cup grated Parmesan cheese, 1/4 cup panko breadcrumbs, and 2 tbsp sliced green onion.

Spoon seafood mixture into cremini mushrooms and bake for 18 to 20 minutes until bubbling and golden.
