Cajun Spiced Boiled Peanuts
Tender, briny boiled peanuts slow-cooked with Cajun spices, hot sauce, and garlic for a classic Southern snack. The slow cooker makes this hands-off — just start them in the morning and they're ready by evening.
Ingredients
- 2 lbs raw peanuts in the shell, rinsed
- 8 cups water
- 1/4 cup kosher salt
- 2 tbsp Cajun seasoning blend
- 2 tbsp Louisiana-style hot sauce
- 6 cloves garlic cloves, smashed
- 4 dried bay leaves
- 1 tsp crushed red pepper flakes

Place 2 lbs rinsed raw peanuts in the shell in the slow cooker insert.

Pour 8 cups water over the peanuts. Add 1/4 cup kosher salt, 2 tbsp Cajun seasoning blend, 2 tbsp Louisiana-style hot sauce, 6 cloves smashed garlic cloves, 4 dried bay leaves, and 1 tsp crushed red pepper flakes. Stir to combine.

Cover and cook on HIGH for 7-8 hours, until the peanuts are tender and easily crack between your teeth. Check at 6 hours — if peanuts have absorbed most of the liquid, add another cup of water.

Remove and discard the bay leaves. Taste a peanut and adjust seasoning with more salt or hot sauce if desired.

Serve warm directly from the slow cooker, or let cool and refrigerate in their liquid for up to 5 days.
