Cau Cau
A traditional Peruvian stew featuring tender diced beef tripe cooked with potatoes, aromatic yellow aji pepper, turmeric, and fresh mint.
Ingredients
- 1.5 lbs beef tripe, diced
- 4 yellow potatoes, diced
- 2 tbsp vegetable oil
- 1 cup red onion, finely diced
- 4 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 1/2 tsp ground turmeric
- 3 cups beef broth
- 1/2 cup frozen green peas
- 1/4 cup fresh mint leaves, chopped

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 cup finely diced red onion and 4 minced garlic cloves, cooking for 5 minutes until soft and translucent.

Stir in 2 tbsp aji amarillo paste and 1/2 tsp ground turmeric, cooking for 2 minutes until fragrant.

Add 1.5 lbs diced beef tripe and 3 cups beef broth, bring to a simmer, cover, and cook for 30 minutes until meat reaches 165F and is tender.

Add 4 diced yellow potatoes and cook uncovered for 15 minutes until potatoes are fork tender.

Stir in 1/2 cup frozen green peas and 1/4 cup chopped fresh mint leaves, cooking for 2 additional minutes before serving.
