Ingredients

  • 2 lbs waxy potatoes (yukon gold), peeled and cubed
  • 1 lb fresh beets, peeled and cubed
  • 2 cans canned tuna in water, drained
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice (fresh)
  • 2 tbsp aji verde sauce
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 eggs hard-boiled egg, sliced
  • 1/2 cup pitted black olives
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 2 tbsp butter

Instructions

    Boil 2 lbs peeled and cubed waxy potatoes (yukon gold) and 1 lb peeled and cubed fresh beets separately in salted water until tender, about 15 minutes each. Drain well and return to their pots.

    Mash waxy potatoes (yukon gold) with 2 tbsp butter, 1 tsp salt, and 1/2 tsp white pepper until creamy.

    In a separate bowl, mash fresh beets with 2 tbsp butter, 1 tsp salt, and 1/2 tsp white pepper.

    In another bowl, mix 2 cans drained canned tuna in water, 1/4 cup mayonnaise, 2 tbsp lime juice (fresh), 2 tbsp aji verde sauce, 1/2 cup finely diced red onion, and 1/4 cup chopped fresh cilantro.

    Line a square or rectangular baking dish with plastic wrap. Layer half the fresh beets mixture on the bottom, then spread the canned tuna in water filling, and top with the remaining fresh beets mixture.
