Chicken Tagine with Olives
A tender braised chicken dish simmered with warm aromatic spices, preserved lemon, and savory green olives.
Ingredients
- 2 tbsp olive oil
- 2 lbs bone-in skinless chicken thighs, trimmed
- 1 yellow onion, grated
- 4 garlic cloves, minced
- 2 tsp fresh ginger, grated
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1.5 cups chicken broth
- 2 tbsp preserved lemon rind, chopped
- 1/2 cup cracked green olives, pitted
- 1/4 cup fresh cilantro, chopped

Heat 2 tbsp olive oil in a large heavy pot or tagine over medium heat.

Add 2 lbs trimmed bone-in skinless chicken thighs and sear for 4 minutes per side until lightly browned, then transfer to a plate.

Add 1 grated yellow onion, 4 minced garlic cloves, and 2 tsp grated fresh ginger to the pot, cooking for 3 minutes until soft.

Stir in 1 tsp ground cumin, 1 tsp ground turmeric, and 1/2 tsp ground cinnamon for 1 minute until fragrant.

Pour in 1.5 cups chicken broth and scrape up any browned bits from the bottom of the pot.

Return 2 lbs trimmed bone-in skinless chicken thighs to the pot, cover with a tight fitting lid, and simmer over low heat for 30 minutes.

Stir in 2 tbsp chopped preserved lemon rind and 1/2 cup pitted cracked green olives, then simmer uncovered for 10 minutes until chicken reaches an internal temperature of 165°F.

Stir in 1/4 cup chopped fresh cilantro before serving warm.
