Fekkas
Twice baked Moroccan biscuits enriched with whole almonds, sesame seeds, and aniseed. Fragrant and crunchy, they are traditional tea time sweets.
Ingredients
- 4 eggs
- 2/3 cup granulated sugar
- 1/2 cup vegetable oil
- 2 tbsp orange blossom water
- 1/4 tsp fine salt
- 1 tbsp anise seeds
- 1/3 cup sesame seeds, toasted
- 1/2 cup whole almonds, soaked
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 egg yolk, beaten
- 1/2 tsp instant espresso powder

In a large bowl, whisk together 4 eggs, 2/3 cup granulated sugar, 1/2 cup vegetable oil, 2 tbsp orange blossom water, and 1/4 tsp fine salt until smooth.

Stir in 1 tbsp anise seeds, 1/3 cup toasted sesame seeds, and 1/2 cup soaked whole almonds.

Sift in 3 cups all-purpose flour and 2 tsp baking powder, then mix gently until a soft dough forms.

Divide dough into three long logs on a parchment-lined baking sheet.

Mix 1 beaten egg yolk with 1/2 tsp instant espresso powder and brush over logs, then score lines with a fork.

Bake at 350F for 25 minutes, cool completely, slice crosswise, and bake cut-side up at 300F for 15 minutes until crisp.
