Black beans and rice cooked together with aromatic garlic, peppers, and cumin. A nourishing and satisfying Cuban classic.
Ingredients
- 2 cups long-grain white rice
- 2 cans black beans (15 oz can)
- 2 tbsp olive oil
- 1/2 medium yellow onion, finely diced
- 1/2 pepper red bell pepper, finely diced
- 4 garlic cloves, minced
- 3.5 cups chicken broth
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper

Drain and rinse 2 cans black beans (15 oz can).

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1/2 medium finely diced yellow onion, 1/2 pepper finely diced red bell pepper, and 4 minced garlic cloves. Sauté for 4-5 minutes until softened.

Stir in 2 cups long-grain white rice and toast for 2 minutes.

Add the drained black beans (15 oz can), 3.5 cups chicken broth, 1 tsp ground cumin, 1/2 tsp dried oregano, 1/2 tsp salt, and 1/4 tsp black pepper.

Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.

Remove from heat and let stand covered for 5 minutes.

Fluff with a fork and adjust seasoning. Serve hot.
