Fish Kalya
A traditional Russian fish soup made with tender salmon, root vegetables, and a sour pickle brine broth.
Ingredients
- 2 tbsp vegetable oil
- 1 cup yellow onion, diced
- 1 cup carrot, diced
- 1 cup leek, sliced
- 2 cups Yukon Gold potatoes, cubed
- 6 cups fish stock
- 1 cup dill pickles, diced
- 1/2 cup dill pickle brine
- 1 lb salmon fillet, cubed
- 1/4 cup fresh dill, chopped
- 2 tbsp lemon juice

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 cup diced yellow onion, 1 cup diced carrot, and 1 cup sliced leek, cooking for 8 minutes until softened.

Pour in 6 cups fish stock and add 2 cups cubed Yukon Gold potatoes, bringing the liquid to a simmer for 15 minutes until potatoes are tender.

Stir in 1 cup diced dill pickles and 1/2 cup dill pickle brine, simmering for 5 minutes.

Add 1 lb cubed salmon fillet and cook for 5 to 7 minutes until the fish reaches an internal temperature of 145 degrees F.

Stir in 2 tbsp lemon juice and 1/4 cup chopped fresh dill before serving hot.
