Ingredients

  • 2 lbs mixed fresh fish (carp, catfish, pike), skin and bones removed, cut into chunks
  • 1 medium yellow onions, diced
  • 2 tbsp Hungarian sweet paprika
  • 1/2 tsp Hungarian hot paprika
  • 8 cups fish or vegetable stock
  • 1/2 lb potatoes, diced
  • 1 medium carrot, sliced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil

Instructions

    Heat 1 tbsp vegetable oil in a large pot over medium heat. Add 1 medium diced yellow onions and sauté until translucent, about 5 minutes.

    Stir in 2 minced garlic cloves and cook 1 minute. Add 2 tbsp Hungarian sweet paprika and 1/2 tsp Hungarian hot paprika, stirring constantly for 1 minute to bloom the spices.

    Pour in 8 cups fish or vegetable stock and bring to a boil. Add 1/2 lb diced potatoes, 1 medium sliced carrot, and 2 bay leaves. Reduce heat and simmer 10 minutes.

    Gently add 2 lbs cut into chunks mixed fresh fish (carp, catfish, pike), skin and bones removed to the simmering broth. Season with 1/2 tsp salt and 1/4 tsp black pepper.

    Simmer gently until fish is cooked through and flakes easily, about 10-15 minutes. Do not boil vigorously or the fish will break apart.

    Remove bay leaves. Check that fish reaches an internal temperature of 145 degrees F.
