Jägerschnitzel
Tender pork cutlets seared to perfection and served with a rich, creamy mushroom gravy.
Ingredients
- 1.5 lbs pork loin cutlets, pounded thin
- 1 tsp kosher salt
- 1/2 tsp black pepper, ground
- 3 tbsp unsalted butter
- 8 oz cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1.5 cups beef broth
- 1/4 cup heavy cream

Season 1.5 lbs pounded thin pork loin cutlets evenly on both sides with 1 tsp kosher salt and 1/2 tsp ground black pepper.

Melt half of the 3 tbsp unsalted butter in a large skillet over medium-high heat.

Sear the pork loin cutlets for 3 to 4 minutes per side until browned and internal temperature reaches 145°F, then transfer to a plate.

Melt remaining unsalted butter in skillet, then add 8 oz sliced cremini mushrooms and 1 medium diced yellow onion and cook until browned, about 6 minutes.

Stir in 2 minced garlic cloves and cook 1 minute, then sprinkle with 2 tbsp all-purpose flour and cook 1 minute more.

Whisk in 1.5 cups beef broth and bring to a simmer until thickened, then stir in 1/4 cup heavy cream and return pork loin cutlets to warm through.
