Kartoffelknoedel
Traditional German potato dumplings made from boiled russet potatoes, potato starch, and egg yolk, simmered until light and fluffy.
Ingredients
- 2 lbs russet potatoes, peeled
- 1/2 cup potato starch
- 2 egg yolks, whisked
- 2 tbsp unsalted butter, melted
- 1 tsp salt
- 1/4 tsp ground nutmeg

Boil 2 lbs peeled russet potatoes in a large pot of salted water until tender, about 20 minutes.

Drain potatoes thoroughly, press through a ricer into a large bowl, and cool for 10 minutes.

Add 1/2 cup potato starch, 2 whisked egg yolks, 2 tbsp melted unsalted butter, 1 tsp salt, and 1/4 tsp ground nutmeg to the riced potatoes.

Knead mixture gently by hand until smooth, soft dough forms.

Divide dough into equal portions and roll into smooth dumpling balls.

Gently drop dumplings into a pot of simmering water and cook for 15 minutes until floating.
