Kartoffelsuppe
A traditional German potato soup simmered with root vegetables, marjoram, and sliced sausages. Partially mashed for a rich, creamy texture without heavy thickeners.
Ingredients
- 4 slices bacon, diced
- 1 cup yellow onion, diced
- 1 cup carrots, diced
- 1 cup celery root, diced
- 2 lbs Yukon Gold potatoes, peeled, cubed
- 4 cups vegetable broth
- 1 tsp dried marjoram
- 1/4 cup heavy cream
- 4 wiener sausages, sliced

In a large pot over medium heat, render 4 slices diced bacon until crispy, then transfer half to a plate for garnish.

Add 1 cup diced yellow onion, 1 cup diced carrots, and 1 cup diced celery root to the pot with remaining bacon fat, cooking until softened.

Add 2 lbs peeled, cubed Yukon Gold potatoes, 4 cups vegetable broth, and 1 tsp dried marjoram to the pot and bring to a boil.

Reduce heat to low, cover, and simmer for 20 minutes until potatoes are tender.

Mash half of the soup using a potato masher to create a thick texture.

Stir in 1/4 cup heavy cream and 4 sliced wiener sausages, heating through until sausages reach an internal temperature of 165F.
