Mofongo
A traditional Caribbean dish made from fried green plantains mashed with garlic, olive oil, and crispy pork rinds.
Ingredients
- 4 green plantains, peeled, sliced
- 2 cups vegetable oil
- 6 garlic cloves, minced
- 1 tsp salt
- 2 tbsp extra virgin olive oil
- 1 cup chicharrón pork rinds, crushed
- 1/4 cup warm chicken broth

Heat 2 cups vegetable oil in a heavy skillet over medium heat.

Fry 4 peeled, sliced green plantains in batches for 10 to 12 minutes until cooked through but not browned.

Drain the fried plantains on paper towels.

In a wooden mortar, mash 6 minced garlic cloves with 1 tsp salt and 2 tbsp extra virgin olive oil into a paste.

Add the plantains, 1 cup crushed chicharrón pork rinds, and 1/4 cup warm chicken broth in batches while mashing until combined.

Shape the mashed mixture into a firm dome and serve.
