Oxtail Stew
Rich and tender beef oxtail braised with aromatics, scotch bonnet pepper, and butter beans in a deeply savory gravy.
Ingredients
- 3 lbs oxtail, trimmed
- 1 tbsp browning sauce
- 2 tbsp soy sauce
- 1 tsp ground allspice, ground
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1 scotch bonnet pepper, deseeded
- 2 tbsp vegetable oil
- 3 cups beef broth
- 4 fresh thyme sprigs
- 1 can canned butter beans, drained

Combine 3 lbs trimmed oxtail with 1 tbsp browning sauce, 2 tbsp soy sauce, 1 tsp ground ground allspice, 1 large chopped yellow onion, 4 minced garlic cloves, 1 tbsp minced fresh ginger, and 1 deseeded scotch bonnet pepper in a large bowl and marinate for at least 30 minutes.

Heat 2 tbsp vegetable oil in a large heavy pot over medium-high heat.

Remove oxtail from marinade, reserve marinade, and brown the meat on all sides for 8 minutes.

Pour in 3 cups beef broth, 4 fresh thyme sprigs, and reserved marinade, bring to a boil, cover, and reduce heat to low.

Simmer for 2.5 hours until oxtail reaches an internal temperature of at least 200F and becomes tender.

Stir in 1 can drained canned butter beans and simmer uncovered for 15 minutes until gravy thickens.
