Kotsopsaro Soup
A traditional Greek fish soup made with tender rockfish, hearty root vegetables, and a bright finish of fresh lemon juice.
Ingredients
- 1/4 cup extra virgin olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 2 medium Yukon Gold potatoes, cubed
- 6 cups water
- 1.5 tsp sea salt
- 1/2 tsp black pepper
- 1.5 lbs rockfish fillets, cut in chunks
- 1/4 cup fresh lemon juice

Heat 1/4 cup extra virgin olive oil in a large pot over medium heat.

Add 1 medium diced yellow onion, 2 medium sliced carrots, and 2 chopped celery stalks, then cook for 6 minutes until softened.

Add 2 medium cubed Yukon Gold potatoes, 6 cups water, 1.5 tsp sea salt, and 1/2 tsp black pepper, bringing the liquid to a boil.

Reduce heat to low, cover, and simmer for 15 minutes until vegetables are tender.

Add 1.5 lbs cut in chunks rockfish fillets to the pot and cook gently for 8 to 10 minutes until opaque and reaching an internal temperature of 145 F.

Remove from heat, stir in 1/4 cup fresh lemon juice, and serve warm.
