Lamb Kleftiko
Tender lamb wrapped in parchment and baked with vegetables and herbs. This traditional Greek dish delivers succulent, aromatic meat with fresh flavors.
Ingredients
- 3 lbs lamb leg steaks or shoulder
- 1 lb potatoes, diced, diced
- 8 oz zucchini, diced, diced
- 1 red onion, sliced, sliced
- 2 cups cherry tomatoes, halved, halved
- 4 cloves garlic, minced, minced
- 2 tbsp fresh oregano
- 2 tsp fresh thyme
- 1/4 cup fresh lemon juice
- 3 tbsp olive oil
- to taste salt and black pepper

Preheat oven to 400°F.

Tear off sheets of parchment paper and arrange on a work surface. Divide 1 lb diced potatoes, diced, 8 oz diced zucchini, diced, 1 sliced red onion, sliced, and 2 cups halved cherry tomatoes, halved evenly among the sheets.

Season 3 lbs lamb leg steaks or shoulder with to taste salt and black pepper. Place one piece on top of each bed of vegetables.

In a small bowl, mix 4 cloves minced garlic, minced, 2 tbsp fresh oregano, 2 tsp fresh thyme, 1/4 cup fresh lemon juice, and 3 tbsp olive oil.

Drizzle the herb mixture over 3 lbs lamb leg steaks or shoulder and vegetables.

Fold parchment paper over to create sealed packets, crimping edges to seal completely.

Place packets on a baking sheet and bake for 1.5 hours until 3 lbs lamb leg steaks or shoulder is very tender. Temperature should reach 160°F.

Carefully open packets (steam will be hot) and transfer to serving plates. Serve immediately with the cooking liquid drizzled over top.
