  • 8 oz zucchini, diced, diced
  • 1 red onion, sliced, sliced
  • 2 cups cherry tomatoes, halved, halved

  • 2 tbsp fresh oregano
  • 2 tsp fresh thyme
  • 1/4 cup fresh lemon juice
  • 3 tbsp olive oil
  • to taste salt and black pepper

    Preheat oven to 400°F.

    Tear off sheets of parchment paper and arrange on a work surface. Divide 1 lb diced potatoes, diced, 8 oz diced zucchini, diced, 1 sliced red onion, sliced, and 2 cups halved cherry tomatoes, halved evenly among the sheets.

    Season 3 lbs lamb leg steaks or shoulder with to taste salt and black pepper. Place one piece on top of each bed of vegetables.

    In a small bowl, mix 4 cloves minced garlic, minced, 2 tbsp fresh oregano, 2 tsp fresh thyme, 1/4 cup fresh lemon juice, and 3 tbsp olive oil.

    Drizzle the herb mixture over 3 lbs lamb leg steaks or shoulder and vegetables.

    Fold parchment paper over to create sealed packets, crimping edges to seal completely.

    Place packets on a baking sheet and bake for 1.5 hours until 3 lbs lamb leg steaks or shoulder is very tender. Temperature should reach 160°F.
