Maghlouba Soup
A comforting soup inspired by the traditional layered rice dish, combining tender chicken, spices, cauliflower, eggplant, and rice in a warm broth.
Ingredients
- 2 tbsp olive oil
- 1 lb boneless skinless chicken thighs, diced
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 1 small eggplant, cubed
- 2 cups cauliflower florets, chopped
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1 tsp salt
- 6 cups low-sodium chicken broth
- 1/2 cup long grain white rice, rinsed

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 lb diced boneless skinless chicken thighs and cook for 5 minutes until browned.

Stir in 1 chopped yellow onion and 4 minced garlic cloves, cooking for 3 minutes until soft.

Add 1 small cubed eggplant, 2 cups chopped cauliflower florets, 1 tsp ground allspice, 1/2 tsp ground cinnamon, 1/2 tsp ground turmeric, and 1 tsp salt, stirring for 2 minutes.

Pour in 6 cups low-sodium chicken broth and add 1/2 cup rinsed long grain white rice, bringing the soup to a boil.

Reduce heat to low, cover, and simmer for 20 minutes until rice and vegetables are tender and chicken reaches an internal temperature of 165F.
