Manakish Za'atar
Traditional Levantine flatbread topped with an aromatic mixture of wild thyme za'atar blend and extra virgin olive oil. Baked until golden with soft, airy edges.
Ingredients
- 3 cups all-purpose flour
- 2 tsp active dry yeast
- 1 tsp sugar
- 1 tsp fine sea salt
- 1 cup warm water
- 6 tbsp extra virgin olive oil
- 4 tbsp za'atar spice blend

Mix 1 cup warm water, 1 tsp sugar, and 2 tsp active dry yeast in a bowl and sit for 5 minutes until foamy.

Mix in 3 cups all-purpose flour, 1 tsp fine sea salt, and 2 tbsp of extra virgin olive oil, then knead for 8 minutes until smooth.

Cover dough and let rise in a warm place for 1 hour until doubled.

Preheat oven to 450 degrees F and stir remaining extra virgin olive oil with 4 tbsp za'atar spice blend in a dish.

Divide dough into 4 rounds, press dimples into top, and spread za'atar paste over dough.

Bake on a preheated tray for 8 to 10 minutes until golden.
