Mixed Vegetable Torshi
A traditional Middle Eastern pickled vegetable condiment with crunchy cauliflower, carrots, and aromatic spices steeped in tangy vinegar.
Ingredients
- 4 cups cauliflower florets, chopped
- 2 cups carrots, sliced
- 1 cup celery stalks, chopped
- 6 garlic cloves, peeled
- 3 cups white distilled vinegar
- 3 cups water
- 2 tbsp pickling salt
- 1 tsp ground turmeric
- 1 tsp nigella seeds
- 1 tsp whole coriander seeds, crushed

Combine 3 cups white distilled vinegar, 3 cups water, 2 tbsp pickling salt, 1 tsp ground turmeric, 1 tsp nigella seeds, and 1 tsp crushed whole coriander seeds in a saucepan over medium heat.

Bring the brine mixture to a simmer, stirring until salt dissolves completely.

Pack 4 cups chopped cauliflower florets, 2 cups sliced carrots, 1 cup chopped celery stalks, and 6 peeled garlic cloves tightly into clean glass jars.

Pour the hot brine over the vegetables, ensuring all pieces are submerged.
