Pickled Turnips
Crisp turnip batons pickled with red beet for a distinct pink hue and sharp, tangy flavor. Ideal as a crunchy condiment for sandwiches, wraps, and grilled meats.
Ingredients
- 2 lbs purple top turnips, batoned
- 1 small red beet, sliced
- 4 garlic cloves, peeled
- 3 cups water
- 1 cup distilled white vinegar
- 2 tbsp coarse sea salt

Combine 3 cups water, 1 cup distilled white vinegar, and 2 tbsp coarse sea salt in a saucepan over medium heat, stirring until the salt dissolves fully.

Remove brine from heat and allow it to cool slightly for 5 minutes.

Pack 2 lbs batoned purple top turnips, 1 small sliced red beet, and 4 peeled garlic cloves tightly into a clean glass jar.

Pour the warm brine over the vegetables, completely submerging them.

Seal the jar, cool to room temperature, then refrigerate for at least 5 days before serving.
