Protein Tiramisu Cups
Ladyfingers soaked in espresso layered with a fluffy, protein-rich Greek yogurt mascarpone cream for a lighter spin on the Italian classic. Plan ahead: chill at least 2 hours before serving.
Ingredients
- 2 cups plain full-fat Greek yogurt
- 4 oz mascarpone cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup brewed espresso or strong coffee, cooled
- 16 ladyfinger cookies (savoiardi)
- 2 tbsp unsweetened cocoa powder
- 1 oz dark chocolate, finely grated

In a bowl, beat together 2 cups plain full-fat Greek yogurt, 4 oz mascarpone cheese, 1/4 cup powdered sugar, and 1 tsp vanilla extract until smooth and fluffy, about 2 minutes.

Pour 1/2 cup cooled brewed espresso or strong coffee into a shallow bowl. Quickly dip each ladyfinger cookies (savoiardi) into the espresso for 2-3 seconds per side — do not soak too long or they will become soggy.

Break the dipped ladyfingers to fit and layer them in the bottom of 4 cups or glasses.

Spoon half the yogurt cream mixture over the ladyfingers, dividing evenly. Add a second layer of dipped ladyfingers, then top with the remaining cream.

Dust the tops with 2 tbsp unsweetened cocoa powder and scatter 1 oz finely grated dark chocolate over each cup. Refrigerate for at least 2 hours before serving.
