Ras Malai
Soft, flattened curd cheese patties soaked in sweet, cardamom and saffron infused milk syrup.
Ingredients
- 12 cups whole milk
- 1/4 cup lemon juice
- 4 cups water
- 1.5 cups granulated sugar
- 1/2 tsp ground cardamom
- 2 pinches saffron strands
- 2 tbsp pistachios, chopped

Bring 12 cups whole milk to a boil in a large pot over medium heat.

Stir in 1/4 cup lemon juice to curdle the milk, then strain through cheesecloth and rinse with cold water.

Squeeze out excess liquid from the milk curd and knead on a clean surface for 8 minutes until smooth.

Divide the dough into equal portions and flatten into thin patties.

In a wide pan, boil 4 cups water with 1.5 cups granulated sugar, then simmer the patties covered for 15 minutes until doubled in size.

Flavor the remaining cooked milk syrup with 1/2 tsp ground cardamom and 2 pinches saffron strands.

Gently transfer the pressed patties into the flavored milk, top with 2 tbsp chopped pistachios, and chill before serving.
