Rice and Beans
A fragrant, savory West African styled rice and beans dish cooked with aromatics, tomato, and spices.
Ingredients
- 2 tbsp vegetable oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 tsp salt
- 3 cups vegetable broth
- 2 cups long-grain white rice, rinsed
- 2 cans black-eyed peas, drained

Heat 2 tbsp vegetable oil in a medium pot over medium heat.

Add 1 diced yellow onion, 4 minced garlic cloves, and 1 tsp grated fresh ginger, stirring for 4 minutes until softened.

Stir in 2 tbsp tomato paste, 1 tsp smoked paprika, 1/2 tsp dried thyme, and 1 tsp salt, cooking for 1 minute.

Pour in 3 cups vegetable broth, then add 2 cups rinsed long-grain white rice and 2 cans drained black-eyed peas.

Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes until rice is tender.

Remove from heat, let stand covered for 5 minutes, then fluff with a fork.
