Shakshouka
Gently poached eggs resting in a warm, spiced tomato and pepper sauce finished with herbs and cheese.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 28 oz canned crushed tomatoes
- 4 eggs
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped

Heat 2 tbsp olive oil in a large skillet over medium heat.

Add 1 diced yellow onion and 1 diced red bell pepper, stirring until softened for about 5 minutes.

Stir in 2 minced garlic cloves, 1 tsp ground cumin, and 1 tsp smoked paprika, cooking for 1 minute until fragrant.

Pour in 28 oz canned crushed tomatoes and simmer for 10 minutes until the sauce thickens slightly.

Create four small wells in the sauce and crack 4 eggs directly into the wells.

Cover the skillet and simmer for 5 to 8 minutes until egg whites are set and yolks remain soft.

Sprinkle with 1/4 cup crumbled feta cheese and 2 tbsp chopped fresh parsley before serving warm.
