Shirat
A deeply savory Middle Eastern beef broth soup simmered with warm spices, onions, and tomato. Rich and fragrant, it is traditionally served warm alongside flatbread.
Ingredients
- 1.5 lbs beef chuck roast, cubed
- 2 tbsp olive oil
- 2 yellow onion, diced
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tsp salt

Heat 2 tbsp olive oil in a heavy pot over medium-high heat.

Add 1.5 lbs cubed beef chuck roast and sear until browned on all sides, ensuring the internal temperature reaches at least 160 F.

Remove the meat and add 2 diced yellow onion and 4 minced garlic cloves to the pot, cooking for 5 minutes until soft.

Stir in 1 tsp ground cumin, 1 tsp ground coriander, and 2 tbsp tomato paste, cooking for 1 minute until fragrant.

Return the meat to the pot, pour in 4 cups beef broth and 1 tsp salt, then simmer uncovered for 30 minutes until tender.
