Shorbat Banadura
A comforting Middle Eastern tomato soup simmered with rice, garlic, and subtle warm spices. It offers a light yet flavorful broth perfect for a quick meal.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 28 oz crushed tomatoes
- 4 cups vegetable broth
- 1/4 cup long-grain white rice, rinsed
- 1/2 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground black pepper

Heat 2 tbsp olive oil in a pot over medium heat.

Add 1 diced yellow onion and cook for 5 minutes until translucent.

Stir in 4 minced garlic cloves and 2 tbsp tomato paste, cooking for 1 minute until fragrant.

Pour in 28 oz crushed tomatoes and 4 cups vegetable broth, stirring well to combine.

Add 1/4 cup rinsed long-grain white rice, 1/2 tsp ground cumin, 1 tsp salt, and 1/2 tsp ground black pepper.
