Turrón de Coco
A traditional Cuban coconut candy made with shredded coconut simmered in spiced sugar syrup and enriched with egg yolks for a soft, chewy treat.
Ingredients
- 1.5 cups granulated sugar
- 1 cup water
- 1 cinnamon stick
- 2 lime peel strips
- 3 cups unsweetened shredded coconut
- 2 egg yolks, beaten

Combine 1.5 cups granulated sugar, 1 cup water, 1 cinnamon stick, and 2 lime peel strips in a saucepan over medium heat.

Cook for 8 minutes until a light syrup forms, then remove and discard the cinnamon stick and lime peel strips.

Stir in 3 cups unsweetened shredded coconut and simmer over medium-low heat for 10 minutes until the liquid reduces and thickens.

Temper 2 beaten egg yolks with a spoonful of the hot coconut mixture, then stir them completely into the saucepan.

Cook for 3 additional minutes while stirring continuously, then pour into a parchment-lined dish to set.
