Sorrel Soup
A classic green soup featuring tender potatoes and tangy sorrel leaves in a clear broth. Served hot with sliced hard boiled eggs and a dollop of sour cream.
Ingredients
- 2 tbsp butter
- 1 yellow onion, diced
- 2 lbs Yukon Gold potatoes, diced
- 6 cups vegetable broth
- 6 oz fresh sorrel leaves, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 4 hard-boiled eggs, quartered
- 1/2 cup sour cream

Melt 2 tbsp butter in a large pot over medium heat.

Add 1 diced yellow onion and cook for 5 minutes until soft.

Add 2 lbs diced Yukon Gold potatoes and 6 cups vegetable broth, bringing the liquid to a simmer.

Cook for 15 minutes until potatoes are fork-tender.

Stir in 6 oz chopped fresh sorrel leaves, 1 tsp salt, and 1/2 tsp black pepper, cooking for 2 minutes until greens wilt.

Ladle soup into bowls and top with 4 quartered hard-boiled eggs and 1/2 cup sour cream.
