Misir Lega Tibs
Sautéed red lentils with peppers and warming spices. Quick, protein-packed Ethiopian side trending for its ease and nutrition.
Ingredients
- 1.5 cups red lentils, rinsed
- 3 cups water
- 3 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1/4 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 4 tbsp fresh cilantro, chopped

Bring 3 cups water to a boil in a saucepan.

Add 1.5 cups rinsed red lentils and return to a boil, then reduce heat and simmer for 8-10 minutes until lentils are tender but still holding their shape.

Drain any excess water if needed and set lentils aside.

Heat 3 tbsp olive oil in a large skillet over medium heat.

Add 1 diced onion and 1 diced red bell pepper, cook for 3-4 minutes until softened.

Add 3 minced garlic cloves and 1 tbsp minced fresh ginger, cook for 1 minute until fragrant.

Stir in 1/4 tsp ground turmeric, 1/2 tsp ground cumin, and 1/2 tsp paprika.

Add the cooked lentils to the skillet and mix well.

Season with 1/2 tsp salt and cook for 5 more minutes, stirring occasionally.

Top with 4 tbsp chopped fresh cilantro before serving.
