Sour Cream Custard Cake
A luxurious Russian layer cake featuring a tender sponge cake alternating with silky sour cream custard filling and topped with a light sour cream frosting.
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 4 eggs
- 1 cup sugar
- 1/2 cup butter (melted)
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 2 cups sour cream
- 1/2 cup powdered sugar
- 2 tbsp butter (for custard), softened

Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.

Whisk together 2 cups all-purpose flour, 2 tsp baking powder, and 1/4 tsp salt in a bowl.

In another bowl, beat 4 eggs and 1 cup sugar together for 3-4 minutes until light and fluffy.

Gently fold the dry ingredients into the egg mixture, then fold in 1/2 cup butter (melted), 1/2 cup whole milk, and 1 tsp vanilla extract.

Divide batter between the prepared pans.

Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.

Remove from oven and cool in pans for 10 minutes. Turn out onto wire racks to cool completely.

For the custard filling, beat 2 tbsp softened butter (for custard) until creamy, then gradually beat in 2 cups sour cream and 1/2 cup powdered sugar until smooth and fluffy.

Once cakes have cooled, place one layer on a cake plate and spread with half the custard filling.

Top with the second cake layer and frost the top and sides with the remaining custard filling.
