Sticky Chicken Rice Bowls
Bold and saucy chicken bites coated in a sweet heat glaze, served over fluffy rice with tender broccoli and a creamy spicy drizzle.
Ingredients
- 2 cups uncooked white rice
- 2 small broccoli heads, chopped
- 3 large boneless chicken breasts, cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup rice vinegar
- 3 garlic cloves, minced
- 2 tbsp sriracha
- 2 tsp sesame oil
- 1 tsp ground ginger
- 2 tsp arrowroot powder
- 2 tbsp water for slurry
- 1/2 cup mayonnaise
- 1 tbsp sriracha for drizzle
- 2 tbsp water for drizzle
- 2 tsp sesame seeds, toasted

Cook 2 cups uncooked white rice according to package instructions and set aside.

Season 3 large cubed boneless chicken breasts with 1 tsp salt, 1/2 tsp black pepper, 1 tsp chili powder, 1 tsp smoked paprika, 1 tsp onion powder, and 1 tsp dried oregano.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add seasoned boneless chicken breasts and cook until golden and an internal temperature of 165 F is reached.

In a small bowl, whisk together 1/2 cup soy sauce, 1/2 cup honey, 1/4 cup rice vinegar, 3 minced garlic cloves, 2 tbsp sriracha, 2 tsp sesame oil, and 1 tsp ground ginger.

In a separate small dish, stir 2 tsp arrowroot powder into 2 tbsp water for slurry to create a slurry.

Pour the sauce mixture over the cooked boneless chicken breasts and bring to a simmer. Stir in the slurry and cook until thickened and glossy.

Steam 2 small chopped broccoli heads in a covered pot with a splash of water until tender-crisp.

In a small bowl, whisk together 1/2 cup mayonnaise, 1 tbsp sriracha for drizzle, and 2 tbsp water for drizzle until smooth.

Assemble bowls by dividing uncooked white rice among serving dishes, topping with sticky boneless chicken breasts and steamed broccoli heads, drizzling with spicy mayo, and finishing with 2 tsp toasted sesame seeds.
