Stuffed Grape Leaves
Tender grape leaves stuffed with a savory mixture of rice, fresh herbs, onion, and lemon. Served chilled or at room temperature as a classic appetizer.
Ingredients
- 40 jarred grape leaves, rinsed
- 1 cup short-grain rice, rinsed
- 1/3 cup extra virgin olive oil
- 1 medium yellow onion, finely diced
- 1/4 cup fresh mint, chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups water

Sauté 1 medium finely diced yellow onion in half of the 1/3 cup extra virgin olive oil in a skillet over medium heat until soft, about 5 minutes.

Stir in 1 cup rinsed short-grain rice, 1/2 cup chopped fresh parsley, 1/4 cup chopped fresh mint, 1 tsp salt, and 1/2 tsp black pepper, then cook for 2 minutes and remove from heat.

Lay 40 rinsed jarred grape leaves flat, add a tablespoon of filling near the stem, fold sides, and roll tightly.

Arrange rolls seam-side down in a pot, then pour in remaining 1/3 cup extra virgin olive oil, 1/4 cup lemon juice, and 2 cups water.

Place a heavy plate on top of the rolls, cover pot, and simmer on low heat for 45 minutes until tender.
