Tahini Sauce
A creamy Middle Eastern sesame sauce made with tahini, lemon juice, and garlic. Drizzle over falafel, roasted vegetables, grain bowls, or use as a rich dipping sauce.
Ingredients
- 1/2 cup tahini (sesame paste), well stirred
- 1/4 cup fresh lemon juice
- 2 garlic cloves, minced
- 1/4 cup ice-cold water
- 1/2 tsp kosher salt
- 1/4 tsp ground cumin
- 2 tbsp fresh flat-leaf parsley, finely chopped

In a medium bowl, whisk together 1/2 cup well stirred tahini (sesame paste) and 1/4 cup fresh lemon juice. The mixture will seize and become thick — that's normal.

Add 2 minced garlic cloves, 1/4 tsp ground cumin, and 1/2 tsp kosher salt and whisk to combine.

Whisk in 1/4 cup ice-cold water one tablespoon at a time until the sauce loosens to a pourable, creamy consistency. Add more water as needed.

Taste and adjust with more lemon juice or salt.

Stir in 2 tbsp finely chopped fresh flat-leaf parsley just before serving. Store refrigerated for up to 5 days.
