Tahini Sauce

Ingredients

  • 1/2 cup tahini (sesame paste), well stirred
  • 1/4 cup fresh lemon juice
  • 2 garlic cloves, minced
  • 1/4 cup ice-cold water
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cumin
  • 2 tbsp fresh flat-leaf parsley, finely chopped

Instructions

    In a medium bowl, whisk together 1/2 cup well stirred tahini (sesame paste) and 1/4 cup fresh lemon juice. The mixture will seize and become thick — that's normal.

    Add 2 minced garlic cloves, 1/4 tsp ground cumin, and 1/2 tsp kosher salt and whisk to combine.

    Whisk in 1/4 cup ice-cold water one tablespoon at a time until the sauce loosens to a pourable, creamy consistency. Add more water as needed.

    Taste and adjust with more lemon juice or salt.

    Stir in 2 tbsp finely chopped fresh flat-leaf parsley just before serving. Store refrigerated for up to 5 days.
