Uso Halaya
A rich and creamy Filipino sweet spread made from purple yam, coconut milk, and butter cooked to a dense texture.
Ingredients
- 1 lb purple yam, grated
- 1 cup coconut milk
- 1/2 cup sweetened condensed milk
- 1/2 cup evaporated milk
- 1/4 cup unsalted butter, cubed
- 1 tsp vanilla extract

In a large nonstick pan over medium heat, combine 1 lb grated purple yam, 1 cup coconut milk, 1/2 cup sweetened condensed milk, and 1/2 cup evaporated milk.

Cook the mixture, stirring constantly with a wooden spoon or spatula, for 30 minutes until thick.

Add 1/4 cup cubed unsalted butter and 1 tsp vanilla extract to the pan, stirring continuously until melted and fully incorporated.

Continue stirring for 10 to 15 minutes until the paste becomes very dense and pulls away easily from the pan.

Transfer the mixture to a greased mold, smooth the top surface, and allow to cool before serving.
