White Beans and Ham
Tender white beans simmered with smoked ham shank and Cajun aromatics for a rich and hearty dish.
Ingredients
- 2 tbsp olive oil
- 1 large yellow onion, diced
- 2 celery stalks, diced
- 1 medium green bell pepper, diced
- 4 garlic cloves, minced
- 1 tbsp Cajun seasoning
- 1 lb dried Great Northern beans, soaked
- 1 lb smoked ham shank
- 6 cups chicken broth
- 2 bay leaves

Heat 2 tbsp olive oil in a large Dutch oven over medium heat.

Add 1 large diced yellow onion, 2 diced celery stalks, and 1 medium diced green bell pepper, cooking for 6 minutes until softened.

Stir in 4 minced garlic cloves and 1 tbsp Cajun seasoning, cooking for 1 minute until fragrant.

Add 1 lb soaked dried Great Northern beans, 1 lb smoked ham shank, 2 bay leaves, and 6 cups chicken broth to the pot.

Bring to a boil, then reduce heat to low and simmer covered for 90 minutes until beans are tender.

Remove 1 lb smoked ham shank, shred meat from the bone, check internal temperature reaches 145°F, and return meat to the pot.

Discard 2 bay leaves and mash a few beans against the side of the pot to thicken before serving.
