Pasta Aglio e Olio
Silky spaghetti tossed with garlic-infused olive oil and red pepper flakes, a simple Roman classic that's pure, elegant simplicity.
Ingredients
- 1 lb dried spaghetti
- 1/2 cup extra-virgin olive oil
- 4 cloves garlic, sliced thin
- 1/4 tsp red pepper flakes
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
- 2 tbsp fresh flat-leaf parsley, chopped

Bring a large pot of salted water to a boil. Cook 1 lb dried spaghetti according to package directions until al dente.

While pasta cooks, heat 1/2 cup extra-virgin olive oil in a large skillet over low heat. Add 4 cloves sliced thin garlic and 1/4 tsp red pepper flakes, and cook gently for 2-3 minutes until fragrant. Do not brown the garlic.

Reserve 1 cup of dried spaghetti cooking water before draining the pasta.

Add the cooked dried spaghetti to the oil mixture and toss gently. Add 1/4 cup of the reserved pasta water and stir to create a silky sauce.

Season with 1 tsp salt and 1/4 tsp black pepper. Add more pasta water as needed to achieve a light, glossy coating.

Divide among serving bowls and top with 1/4 cup grated Parmesan cheese (optional) and 2 tbsp chopped fresh flat-leaf parsley. Serve immediately.
