Arroz con Dulce
A traditional coconut rice pudding infused with warm spices and raisins, chilled until firm and fragrant.
Ingredients
- 1.5 cups medium-grain white rice, soaked
- 3 cups water
- 1 can full-fat coconut milk
- 1 can cream of coconut
- 4 cinnamon sticks
- 6 whole cloves
- 1 inch fresh ginger, sliced
- 1 star anise pod
- 1/2 tsp salt
- 1/2 cup raisins, soaked
- 1/2 tsp ground cinnamon

Combine 3 cups water, 4 cinnamon sticks, 6 whole cloves, 1 inch sliced fresh ginger, and 1 star anise pod in a saucepan.

Simmer for 10 minutes, then strain and discard the whole spices.

Add strained spice tea, 1 can full-fat coconut milk, 1/2 tsp salt, and 1.5 cups soaked medium-grain white rice to a large pot over medium heat.

Bring to a boil, cover, reduce heat to low, and cook 15 minutes.

Stir in 1 can cream of coconut and 1/2 cup soaked raisins, then cook uncovered over low heat for 12 minutes while stirring.

Transfer to a platter, dust with 1/2 tsp ground cinnamon, cool completely, and chill.
