Breadfruit Salad
A Caribbean staple salad made with tender boiled breadfruit tossed in a tangy mayonnaise dressing with crisp vegetables.
Ingredients
- 4 cups breadfruit, peeled, cubed
- 1/2 cup mayonnaise
- 2 tbsp yellow mustard
- 1/2 cup red bell pepper, diced
- 1 celery stalk, diced
- 1/4 cup green onion, sliced
- 2 tbsp fresh lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper, ground

Boil salted water in a large pot over medium-high heat.

Add 4 cups peeled, cubed breadfruit and cook for 15 minutes until tender when pierced with a fork.

Drain 4 cups peeled, cubed breadfruit completely and let cool to room temperature.

In a large bowl, whisk together 1/2 cup mayonnaise, 2 tbsp yellow mustard, 2 tbsp fresh lime juice, 1/2 tsp salt, and 1/4 tsp ground black pepper.

Add cooled 4 cups peeled, cubed breadfruit, 1/2 cup diced red bell pepper, 1 diced celery stalk, and 1/4 cup sliced green onion to the bowl and gently fold until coated.

Cover and chill in the refrigerator for at least 1 hour before serving.
