Arroz Zambito
A traditional Peruvian dessert of spiced rice pudding sweetened with unrefined cane sugar syrup, toasted coconut, and pecans.
Ingredients
- 1 cup long-grain white rice
- 4 cups water
- 2 cinnamon stick
- 4 whole cloves
- 2 orange peel strip
- 8 oz chancaca or dark brown sugar, chopped
- 12 fl oz evaporated milk
- 1/2 cup dark raisins
- 1/2 cup pecans, chopped
- 1/4 cup unsweetened shredded coconut, toasted
- 1/2 tsp ground cinnamon

Combine 4 cups water, 2 cinnamon stick, 4 whole cloves, and 2 orange peel strip in a saucepan over high heat and bring to a boil.

Add 1 cup long-grain white rice, reduce heat to low, cover, and simmer for 18 minutes until rice is tender.

Discard the cinnamon sticks, cloves, and orange peel from the pot.

In a separate small pot, melt 8 oz chopped chancaca or dark brown sugar with 2 tablespoons of water over medium heat to form a syrup.

Pour the syrup and 12 fl oz evaporated milk into the rice, stirring continuously over low heat for 10 minutes until creamy.

Fold in 1/2 cup dark raisins, 1/2 cup chopped pecans, and 1/4 cup toasted unsweetened shredded coconut, then remove from heat.

Transfer to serving dishes and dust with 1/2 tsp ground cinnamon before serving.
